Meet ajvar, a vegan caviar from the Balkans that was even discussed with singer Dua Lipa.

Just a decade ago, Melisa Hasanspahic, from the eastern Bosnian city of Gorazde, could not have imagined that today she would run a food production company based on a recipe she inherited from her mother.

But her life changed when she started selling pots of homemade ajvar, a very popular vegan treat that until then she had only given to friends and family.

“I love Aivar, always have,” says Hasanspahic, now a businesswoman who is jokingly referred to as “Lady Aivar” by family, friends and clients.

The orange-colored paste made from roasted red peppers is adored not only by Hasanspahić, but throughout Bosnia and Herzegovina — and the entire Balkan region — where other “Lady Aivar” like her distribute or sell homemade aivar in their communities.
