And different cakes continued to appear, conquering the Internet through videos and photographs, being reproduced and transferred to holiday tables. Isolation and the impossibility of arranging big holidays forced people to change the accents of birthdays.
The décor and varied menu, the elements that most people invested in the most, were no longer as relevant without the presence of guests. The cake, almost an indispensable item for any party, was elevated to the role of the protagonist.
Confectioner Isabela Vitorino da Silva adds that in addition to cakes that attract a lot of attention, customers prefer decorations that can be eaten. “Those cakes filled with things like paper and plastic decorations are not very nice. People want something beautiful but without waste, they want to be able to eat the whole cake.”
Despite trends such as square cakes, marbled frosting, and pool cake, among others, the biggest birthday wish is personalization. Isabela says that the cakes, which represent the personality of the celebrant, are almost unanimous.
“It’s fun because when it comes to trends, people want things that are unique and different. The client, a horror movie lover, asked me for a creepy cake, with shards of glass and very bloody, ”he recalls. Of course, each baker has his own secrets, but Isabela says that unusual and varied decorations are usually made from decorated cookies and isomalt, a sweetener similar to sugar.
In the world of icing, there are ingredients like buttercream that allow you to paint a cake like a canvas and create true works of art. Edible flowers and different confectionery tips such as chouveirinho bring even more varied effects. And the coolest one? The parts of the cake that look like decorations, fabrics, or paper are not only delicious, but also completely edible.
Cake designer Maria de Fatima explains that glass effect in Brazil is most often used in cakes. Models with a 3D effect are among the most sought after among Brazilians. She believes that a variety of desires are the result of the desire to get out of the monotony, inspired by the culinary show boom.
Is this a cake or a meme?
During the pandemic, when parties were suspended, many people used candy to make friends feel special. However, a traditional cake would be a waste of time as most people were isolated or had few family members.

Among the most inventive are cakes with 3D decorations that seem to defy gravity and glass cakes that appear to be made of glass. According to the search and trending platform Pinterest, the demand for 3D cakes has grown by 60% in 2022.
Gravity defying cakes increased by 70% and searches for bubble cakes increased by 55%. On her Confeitaria Online blog, cake designer Simone Reis talks about the fluffy cake, the conceptual tiered cake, the granite cake, and the brushstroke.
